Calcium sulfate for food Application

Food-grade calcium sulfate is widely used in the food industry due to its safety, stability and low price.

Soy product coagulant: When making tofu or douhua, boiled soy milk is mixed with gypsum water (calcium sulfate solution). The calcium ions in calcium sulfate cause the soy protein to coagulate, forming the gel-like tofu pudding we are familiar with. After pressing, it becomes tofu. Tofu made with gypsum is usually more tender in texture, has better water retention, and has a unique flavor.

Flour treatment agents and leavening agents: In baking, they are added to flour as dough conditioners, which can enhance the elasticity and toughness of the dough. At the same time, they are also one of the components of baking powder, reacting with sodium bicarbonate (baking soda) to produce carbon dioxide, making cakes, bread and other products fluffy.

Brewing regulator: In the beer brewing process, it can be used to adjust the pH of water and provide an ideal slightly acidic environment for yeast fermentation.

Fruit and vegetable hardening agent: In the canning industry, fruits and vegetables (such as tomatoes, potatoes, etc.) are soaked in a calcium sulfate solution. Calcium ions can combine with pectin in the plant cell walls to form calcium pectate, thereby enhancing the hardness and crispness of the fruits and vegetables and preventing them from becoming soft and mushy during processing.

Calcium fortifier: As a safe source of calcium, it can be added to various foods, such as beverages and breakfast cereals, to increase the calcium content of the products.

Cheese coagulant: In the production of certain types of cheese, it is also used to help milk coagulate.
